Once you have your subject and your camera, you're just going to need to just start capturing. Now, if you're using a tablet or a smartphone, there are built in cameras with software applications to control those, but one of the benefits of stepping up to a dedicated stop motion program is that you get more advanced controls. The ability to lock your exposure, set your focus point, and really control things like white balance. You'll also see advanced features for recording several frames and playing them back. Today, I'm going to use an application called iStopMotion. But there are lots of other applications available out there for IOS and Android.
