It's very important to speak in depth with a client and their potential customers to find out what appeals to them and also what turns them off. There are lots of project brief templates available online that you can use to gather this kind of information from your clients. Surveys can be useful tools for this kind of thing as they collect all of the information in one place. SurveyMonkey is a online survey service that has a free plan that I use to gather this kind of information.
