- Not long after I opened my third restaurant, there was a problem with the kitchen. We were making consistent mistakes that were being caught my customers rather than the cooks. Things like wrong portion sizes, inconsistent flavors, among other things. So I spent some time in that kitchen to see if I could figure out what was going on. As I walked through the kitchen door, the kitchen manager was literally screaming at a cook for a small mistake. Well, no wonder people weren't admitting mistakes. When we make people scared to make mistakes, we make them scared to admit making 'em. Mistakes caught by your team are vital for learning. And more importantly, mistakes caught in the process costs way less the mistakes than go out the door.
